Chef Thai travels to Vietnam, often embarking on a journey to craft the perfect blend of Arabica beans for his bold coffee. His destination was the vibrant region of Central Vietnam, where rich coffee heritage thrives. Partnering with the premier roasters at Tourane Coffee, he immersed himself in the time-honored traditions of coffee cultivation and roasting.
The trip took him through lush landscapes dotted with coffee plantations, where he conversed with local farmers and tasted beans right at the source. Each origin offered unique flavors, influenced by the region’s soil and climate. Chef Thai meticulously sampled various beans, seeking to balance the deep, earthy notes with bright acidity.
In the roastery, he collaborated with the skilled artisans at Tourane Coffee, experimenting with different roasting techniques to enhance the natural characteristics of the beans. Each batch was a labor of love, brewed and refined until they achieved the perfect harmony of flavor—bold yet nuanced.
Through his dedication and expertise, Chef Thai aimed to bring the authenticity of Vietnamese coffee back to his café in Chicago. The result would not only pay homage to the coffee's roots but also offer a memorable experience for his customers, inviting them to savor the essence of Vietnam in every cup.
